Hello, I'm Mr. Ballam, thanks for choosing this lesson.

This lesson is all around making breakfast muffins.

Let's get started, shall we? So, what are we going to learn? Well, by the end of this lesson, you're gonna use your food skills to make breakfast muffins for your school friends.

And what I want to go through now are just some key words that we're gonna cover in the lesson today.

The first one is the word modify, and this means to make changes.

The second word is sweet, and that's a taste, like sugar or honey, and it's not sour.

And the third word is savoury, and that's a salty or spicy taste, not sweet.

So let's get started with the first part of the lesson, which is all around recipe changes.

So when planning to cook, recipes can be modified in order to better suit the occasion.

So for example, it might be a breakfast or a party, or perhaps a person, as it might be friends or grandparents, for example.

And why else might we modify a recipe? What can you think of? Yes, there are lots of different reasons why you might modify a recipe.

It could be that someone has an allergy to a food, so they can't eat a certain ingredient, for example.

Or it might just be, they like certain foods, so we change the recipe so they'll like the dish that we make.

And we might modify the recipe by using different ingredients, for example, or perhaps adding other ingredients to the recipe.

Or we could even change the size of it as well.

Now, when we do this, we also need to make sure we test the recipe, just to make sure it works.

Now, true or false, recipes cannot be changed? True or false? Yes.

That's false, isn't it? And why is that? Well, recipes can be modified for different occasions and the needs of people.

The ingredients can be changed, and other ingredients can be added too.

Well done, if you got that correct.

Now, one type of recipe that can be modified is muffins.

And there are lots of different types of muffins, some are savoury, and some are sweet.

I'm sure you've all tasted different types of muffins.

And some are eaten at different mealtimes, and can be different sizes too.

Now, do you have a favourite muffin? What is that? Can you tell me? Well, there are lots of different types.

I particularly like apple, oat, and cinnamon, I think it's absolutely delicious.

Now, when we're making our breakfast muffins, we can modify the recipe to make it either savoury or sweet.

Now, savoury muffins could contain things like vegetables, herbs, and cheese.

Look at these on the screen, don't they look amazing? And sweet muffins could contain things like fruit, nuts, seeds, and spices as well.

So there's lots of different varieties that we can have for savoury muffins and sweet muffins too.

Now, what else could be added? Well, you're right, there's so much that you could add.

I bet you've come up with some really good ideas, and there's a huge variety of different ingredients we can add to savoury muffins and sweet muffins too.

So let's have a quick check for understanding, shall we? So which ingredients would be used in a savoury muffin? a, b, c, d? That's right.

The first one could be herbs, for example.

Is there any more? Yes.

It's cheese, isn't it? So, these two could be used in a savoury muffin.

Well done.

Okay, well I've got a little task for you now, and I want you to modify the recipe you can see, and I want you to make savoury muffins for a breakfast, and also sweet muffins for a party.

So on the left-hand side, you've got the basic recipe, and then you've got some different ideas that you could add to the different muffins.

But remember, one has got to be a savoury muffin for breakfast, and the other one has got to be a sweet recipe for a party.

And what I want you to do is then write about what you did.

So for example, "It might be to make savoury muffins for breakfast, I would change something." You might add something, and you might make it a different size.

Just think about what we've learned so far.

So, how did you do? I bet you did brilliantly, didn't you? Well, let's have a look at an example together, shall we? So let's do the first one, which is savoury muffins.

So you might of had something like this.

So, "To make savoury muffins for breakfast, I would change the flour to whole milk," for example.

Remember there's lots of different types of flour, and whole milk has got more fibre in it, which is good for us.

The other one is we could add oats.

Do you remember? I told you I like oats in muffins.

And we could also add things like grated vegetables, like courgette for example, and cheese, plus some herbs.

Oh, I bet that's absolutely delicious.

And we could also top it with some chopped tomatoes just to make sure it's really colourful.

Mm, that sounds brilliant.

What did you come up with your savoury recipe? I bet you've come up with some really good ideas.

Now let's look at the sweet recipe.

Remember, this is a sweet muffin for a party.

So, to make sweet muffins for a party, I would, for example, add a little sugar for sweetness.

You might add chopped pineapple, coconuts, and ginger.

Oh, that sounds really good, doesn't it? And you might top each muffin with two raspberries.

That would be really good, wouldn't it? They'd look absolutely amazing.

You could also make mini muffins, and they're great for sharing at a party.

So, I bet you've come up with some brilliant ideas for your savoury and your sweet muffins.

Brilliant work.

Well done.

So let's move on to the second part of the lesson, which is all around making and evaluating your breakfast muffins.

So to make the breakfast muffins, we're going to be measuring, and we're gonna be using the weighing scales, and we're gonna be weighing the flour and the cheese.

Now, always check that the weighing scale has zero on it before you weigh anything, just to make sure you get the right amount.

Now, what would happen if you use too much? Can you tell me? Well, the recipe may not work.

You might have too much flour, for example, and it might be very, very dry.

And we want our muffins to be light and airy, and delicious too, so we always need to make sure we weigh our ingredients accurately.

We're also going to be measuring, and we're gonna be using a measuring jug, and we're going to measure the milk and the oil in the recipe.

Now, only measure what the recipe states.

Remember, we want to make sure it works well.

And we need to put the measuring jug on a flat surface when we measure the milk and the oil.

Now, why should we put the measuring jug on a flat surface, do you think? What do you think? Can you tell me? Hmm.

Well, if we just held a measuring jug, we wouldn't be able to read the level very well, would we? And it might just sometimes be 50, sometimes be 75, and sometimes even 100.

So we put it on a level, flat surface, so it always gives us the right measure.

Well done.

We're also going to be measuring using measuring spoons, and we're going to be measuring the baking powder, the mixed herbs, and the sweet corn.

Now, why do you think we need to use the correct size spoon? Well, that's right, we could add too much or too little of an ingredient, and it might affect the recipe.

And we want the recipe to work really well, don't we? Well done.

So which of these things would you use to measure the oil? Is it a, b, or c? That's right, it's a.

We're going to use the measuring jug to measure the oil.

Brilliant work.

You've been listening and working really hard.

Also to make our breakfast muffins, we're going to be grating.

Can you see here what's happening? So we're going to grate the cheese and the courgette too.

And we're gonna hold the grater down firmly on a chopping board.

And I'm going to rub the food, the cheese and the courgette, down the grater.

Now, Alex is asking, "Why do we use the grater carefully?" What would be your response to Alex? Yes, that's right, the grater is very sharp, so we need to be very careful that we don't grate our fingers or knuckles, and we can be safe when we're cooking.

Well done.

Now let's have a look at grating in action, shall we? So here's the pupil, holding the grater down firmly on the chopping board, and they're rubbing the food down the grater nice and gently.

And then when they've grated enough of what they think they need, they can then lift the grater up and use the food.

Also, to make our muffins, we're going to be whisking.

Can you see here? We're going to whisk together the milk, the oil, and the egg together.

We're also going to be mixing, and we're gonna mix all the ingredients together.

Now, why do you think we might whisk and mix? Can you tell me? Well, let's look at whisking first of all, shall we? And you can see here in the photograph, there's the egg, and we can still see the yolk, the yellow part of the egg, so we need to whisk it so the yolk is combined with the milk and the oil.

And you won't see the yolk anymore, so it's thoroughly combined with the milk and the oil.

And the mixing? Well, that's because we need to combine the wet ingredients, that's the milk, the oil, and the egg with the dry ingredients, so things like the flour, for example, and we need to mix it in so it's thoroughly combined.

Brilliant, well done.

We're also going to be dividing.

And you can see here in the photo, they're dividing the mixture into the muffin tray.

And we're going to divide the mixture equally into six.

And to divide, we're going to use two spoons.

So, one to scoop the mixture, and the other spoon to push the mixture into the muffin case, just so it's nice and hygienic.

And as I've said, we're going to put the mixture into the muffin cases.

And this means they come out of the muffin tray much more easily, and it saves washing up too.

Now, why do you think we've divided the mixture equally? What would happen if you put the mixture in the oven, and some were really small, and some were really big? Wow, that's right.

The small ones would burn really quickly, and the big ones, well they might well be undercooked, they might be really soggy when they come out the oven.

So we divide the mixture equally so they bake at the same time and they're all fantastic at the end.

Brilliant work.

We're also going to be using the oven.

You can see here, the muffin's going into the oven, into a hot oven.

So we preheat the oven before we cook, just to make sure it's the right temperature.

We're gonna use oven gloves while we're using the oven too, and your teacher will help you to use the oven.

Now, why do you think we use oven gloves? Hmm? I bet some of you are thinking, "Well, when I take the food out of the oven, yes, I need to use oven gloves, because the muffin tray will be really hot." But why should we use oven gloves when we are putting food into the oven, even if the muffin tray is cold then? That's right, because the rest of the oven is hot, and we might touch our fingers or our hands onto the hot inside of the oven, for example, like the shelf.

So we need to prevent accidents, so when we're putting food into the oven, or taking food out of the oven, we should always wear oven gloves.

Brilliant.

So, after we've cooked, we can also rate how well we worked.

I'm sure you're gonna all do brilliantly.

And what we might think about are things like being hygienic.

So, do you remember? We use the two spoons to divide the mixture equally rather than using our fingers.

We might also think about working tidily as well, that's really important, so not being very messy at all.

We're also thinking about using our food skills.

So do you remember? Things like weighing things accurately, and whisking, and also mixing.

And also making sure we follow the recipe so we're successful.

And we can rate ourselves using these smiley faces, and we can talk about how we might improve next time.

So for example here, "How I worked," it might be things like being hygienic, following the recipe, working tidily, so not being messy, and using our food skills.

And what we would do under each of the faces, we would give a tick, we would rate how well we did.

So if I ticked under the smiley face, it would mean I did really well.

If I ticked the middle face, which isn't smiling or unhappy, it means I did okay, but I could improve next time.

And if it's the unhappy face, well, I didn't do very well at all, and I need to improve next time to get better.

So, which face here shows that Alex did not do very well and needs to improve next time? Is it a, b, or c? Yes, that's right.

It's c, isn't it? It's the unhappy face.

So Alex has ticked that because he's being honest and he wants to improve next time, he's rated his work and he knows he could do better.

Well done to you.

So now we're going to make our breakfast muffins.

I bet you can't wait.

And before you cook, I want to make sure you're ready to cook.

So you've tied up any long hair, remove jumpers, wash hands, and put on a clean apron too.

Also, I want to make sure you've got your ingredients and your equipment ready so you're ready to cook.

And then while you prepare and cook your muffins, I want you to be safe and hygienic.

Remember, wear oven gloves, and make sure you work tidily, washing your hands.

And also I want you to think about using your food skills accurately and precisely, things like measuring and whisking, for example.

So here are the ingredients and the equipment that you need.

Okay so, how'd you get on? I bet you did brilliantly, didn't you? Do the muffins smell good? How many of you have eaten them already? Some of you have had one or two, I bet.

Now let's just see how we worked, and we're going to check the recipe now to see how we were successful, or perhaps how we could improve next time.

Well, the first thing we would've done with our teacher is to preheat the oven.

Did you do that? It's really important that when we put the muffins in the oven, it's at the right temperature.

We then would've put the flour, baking powder, and herbs into a mixing bowl.

We then would've grated the courgette and cheese.

We then would've whisked together the milk, the oil, and the egg, remember, so it's thoroughly combined.

We then would've stirred the courgette, the cheese, the sweet corn, and the milk mixture into the flour, so mixing everything together.

And then we would've divided the mixture equally into six muffin cases, remember, using the two spoons.

And lastly, we would've baked our muffins for around about 20 to 25 minutes.

Brilliant, I hope they come out really well, and I hope you make them again in the future.

Remember, you could modify the recipe too.

Think about different ingredients you could add, and perhaps having different toppings too.

So now let's evaluate how we worked today.

So what I want you to do is to rate yourself about how you worked, listing any improvements for next time.

So, for example, how I worked being hygienic, you would tick one of the three faces, and then write any improvements the next time.

And if you did really well, make a note about what you did and why you gave yourself that rating.

Great, so how did you get on? Let's look at an example together, shall we? So, being hygienic, what was your rating? Well, I put the really smiley face, so I think I did really well.

And why did I give myself that rating? Well, I was very hygienic, so I need to do the same next time.

For example, I washed my hands, I was wearing a clean apron, I used the two spoons to divide the mixture, so I think I was very hygienic when I was cooking.

The second one, following the recipe, I've gone in the middle here, because I was kind of okay, but I missed a bit of the recipe, I wasn't concentrating.

So I need to read the recipe carefully and concentrate in the future too.

For the third one, working tidily, no, I was very messy, and I need to stop and tidy up.

So in the future, I need to be much more tidy when I work.

And lastly, using my food skills, well, I think I did brilliantly there.

So I did really well in the measuring, grating, mixing, and dividing, so I need to do the same again next time.

And I bet you've come up with some really good ratings for how you worked, and you can use that in the future to get better.

Well, brilliant.

And the food skills we used today were measuring, grating, whisking, mixing, dividing, and using the oven, baking.

And lastly, after we've cooked, we can rate how well we worked, and this helps us to improve next time.

It tells us what we did well and why we did it well, so we can remember that, and if we didn't do so well, we can learn from it and improve and get better.
