Hello, my name is Mr. Ballam Thanks very much for choosing this lesson.

This lesson is all around making patatas bravas.

Let's get started, shall we? So what are we going to learn? Well, you're going to use lots of different types of food skills to make patatas bravas today.

Exciting, right? There are some keywords which I want to go through first of all, which we're going to pick up in the lesson today.

And the first one is Spain, and that's a country in Europe.

The second one is staple food, and this is the food that makes up a large part of the diet or the food that someone eats.

The next one is paprika, and it's a spice made from ground dried peppers.

The fourth word is potato, which is a starchy vegetable.

And very lastly, tapas, which are small Spanish savoury dishes.

Brilliant, well done.

So let's get started with the first part of lesson, potatoes, a staple food.

Now, potatoes were originally cultivated in South America between about 8,000 and 5,000 BC, so a very long time ago.

And there are many different types of potato, which are grown in the UK as well as around the world.

And it's estimated that there are over 5,000 different types of potato in the world.

Isn't that staggering? Now, what sort of potato dishes have you eaten? Oh, there are so many, aren't there? It might be something really simple, like mashed potato, for example.

Or perhaps it's made into a dish like a cottage pie.

So there are lots of different types of potato recipes that you could pick, and from different cuisines around the world too.

And we're going to look at some of those today.

Now, potatoes are a staple food in the UK, and a staple food is a food that makes up a large part of the diet.

And these are foods that are eaten regularly.

Now, other staple foods include things like rice, yams, cassava, wheat, and also maize.

And these are staple foods 'cause they can make up a large part of someone's diet.

Now, true or false? Potatoes are a staple food of the UK.

Yes, that's right, isn't it? It is true.

And why is that? Well, potatoes make up a large part of the diet in the UK as they are eaten regularly.

So therefore they are a staple food.

Well done.

Now, potatoes are used in many cuisines around the world in lots of different dishes.

Let's have a look at few together, shall we? The first one is sag aloo.

Have anybody had that before? Well, how about frites? They look familiar, don't they? Or how about cepelinai? That looks unusual, but I'm sure delicious.

Or how about tortilla de patata? Gnocchi? Or how about cottage pie? Hmm, there are six very different looking dishes, but they all use potato.

Now I wonder where in the world these dishes originate.

Shall we go through them together? Can you guess them first? Hmm? I bet you're gonna do really well, aren't you? How about the first one? Yes, India.

Well done.

That's a delicious dish.

Belgium, and I'm sure there are lots of you that have frites.

sometimes fries, or chips in the UK.

How about the next one? Yes, that's Lithuania.

It's an amazing dish.

Doesn't it look really tasty? The fourth one, Spain.

The next one, Italy.

And the last one, that's right, the UK.

So you can see here, potatoes are using many different types of dishes all around the world.

Now the dish that we're going to make, the patatas bravas, is a dish from Spain and it comprises potatoes topped with a spicy sauce, which is made with paprika and chilli.

And traditionally the potatoes are fried, but they can be roasted in the oven too, which is healthier.

And patatas bravas are usually eaten as a tapas, which are small Spanish savoury dishes, which also include things like olives or fried squid.

And a single dish is called a tapa.

And often tapas are combined to make a meal.

Now, many different tapas dishes in Spain use paprika, and it's made in things like chorizo, which is a sausage or perhaps pinchos morunos which are grilled pork skewers.

And paprika is made from ground dried peppers and it comes in lots of different varieties.

It might be sweet, hot or smoked.

You can see it on the screen here.

It's that red powder.

So as Sofia is saying, "Paprika is very popular in Spanish cooking," in Spanish cuisine.

So the ingredients we're going to use to make our patatas bravas are potatoes and oil.

So the potatoes are going to be roasted in a little bit of oil.

And if we want to, we could use a spray oil too.

Now, why do you think the potatoes are roasted rather than fried? I may have given you a clue earlier.

Yes, that's right.

They're roasted, not fried as they're healthier, so they're not in so much oil.

Brilliant.

Well done.

We're also going to be using onion, garlic, tomatoes, paprika, chilli flakes, and oregano.

Wow.

Don't these look amazing? And we are going to cook all these ingredients together to make the sauce.

Now, what do all these ingredients have in common? Hmm? What could it be? Well, a very simple one is that they're all from plants.

They're all part of a plant.

So the garlic and the onion, they grow under the ground.

The tomatoes are the fruit of the plant.

The paprika, remember it's dried peppers.

So the peppers are grown, the chilli is grown, but it's dried.

And then the oregano, well, that's leaves from a plant.

So what's common with these? They're all parts of a plant.

So let's have a quick check for understanding, shall we? So which ingredients are not used to make the bravas sauce? A, B, C, or D? B.

That's right.

Potatoes and oils are not used to make the sauce.

Do you remember? We use these to roast the potatoes in the oven and we serve them with the sauce.

Brilliant.

Well done.

So I've got a task for you now, and what I want you to do is to help the pupils learn about patatas bravas.

So they've got some questions for you.

So the first one is, where did potatoes originate? Oh, do you remember? The next one, what is a staple food? Name three.

Or how about what spice is made from ground dried peppers? Or what is tapas? And lastly, what's in patatas bravas? So you've got five questions here to answer.

So how did you get on? Well, let's look at the first question together, shall we? We're going to look at an example response.

So where did potatoes originate? Well, potatoes originated from South America.

Do you remember? Between around 8,000 and 5,000 BC.

Well, a staple food is a food that makes up a large part of the diet, foods that are eaten regularly.

And three examples could be potatoes, rice, and wheat.

Brilliant work.

I'm sure you answered these correctly.

How about the next one? What spice is made from ground dried peppers? Yes, that's right, paprika.

Well done.

The next question, what is tapas? Do you remember? Yes.

Tapas are small, savoury dishes.

Brilliant work.

And lastly, what is patatas bravas? Yes, it's two parts, isn't it? First one is potatoes, which are traditionally fried though can be roasted.

And the next one is a spicy sauce made from onions, garlic, tomatoes, paprika, chilli, and oregano.

Brilliant work.

You've done so well today.

I'm really proud of you.

Now let's move on to the second part of the lesson, which is all around making my patatas bravas.

So we always need to work hygienically when we're preparing and cooking food.

And this ensures that the food is safe to eat.

And being hygienic prevents dirt or bacteria getting on our food.

And this is really important as some bacteria can cause food poisoning.

And food poisoning can make someone very ill.

So before we cook, we should always remove jumpers, tie back any long hair, remove watches and bands, wash and dry our hands thoroughly and wear a clean apron.

It's also really important that hands are washed and dried before and after cooking, as well as if you touch the bin, blow your nose, or you're doing some cleaning too.

And we need to check that equipment and our work surfaces are also clean.

And if we're using raw meat or fish, we keep this separate away from ready to eat foods.

And lastly, we need to be clean and tidy as we work.

So true or false? Hands only need to be washed and dried before and after cooking.

That's right, it's false, isn't it? Well, in addition to washing and drying hands before and after cooking, we should also wash and dry them after touching the bin, blowing our nose and doing any cleaning too.

Brilliant work.

Well done.

As well as being hygienic, we need to also make sure we use equipment safely to prevent accidents.

So for example, we use safe cutting techniques.

If we're using a saucepan or kettle, we don't overfill it in case boiling hot water comes out.

Or we always ask for help if we're using things like a toaster, a blender, or the cooker.

And we always use oven gloves when we are putting food into or out of the oven.

It's really hot.

So we've covered being hygienic and safe.

Now let's look at the food skills we're going to be using.

And the first one is measuring.

So we're going to use the weighing scales to measure the potatoes and the tomatoes.

Always make sure it says zero before you weigh anything.

We're also going to be using the measuring spoons to measure the oil and the paprika.

Make sure you use the right sized spoon too.

And lastly, we're going to use a measure called a pinch.

So we're just gonna use our fingertips to add a pinch of chilli flakes and oregano in our spicy sauce.

We're also going to be peeling and we're going to be peeling the onion and the garlic by hand, taking off the papery skin.

And remember, we should always compost the peelings.

We're also going to be dicing and we're going to dice the potato.

So to do this, first of all, we slice the potato into rounds using the claw grip, then we slice each round into slices.

And then finally we cut the slices into cubes all the same size.

And that's called a dice.

So let's have a quick look at the claw grip in action, shall we? So the pupil's making a claw with the hand on top of the food and then running the knife down to make slices.

And what they're doing is they're using their fingertips as a guide to make sure they get the right sized slices.

We're also going to be dicing the onion too.

So to do this, we're going to make slices in half of the onion, leaving the top root intact.

Then we're going to slice across to make the dice.

We're also going to be using the hob for frying and simmering.

So you might use a hob and a cooker or perhaps an electric party pan or perhaps a portable hob.

And we're going to be mixing too.

So we're going to mix and fry the onion and garlic together.

And then we need to mix in the tomatoes, the paprika, the chilli flakes and oregano.

And we mustn't mix too quickly as it might cause splashes.

And as it's going to be hot, it could burn.

So we always need to be very careful to avoid accidents.

Other food skills we're going to use is using the oven.

That means we're going to be roasting.

So we're going to put the potatoes in the oven, we're going to roast them in the oven to cook.

And first of all, we're going to preheat the oven.

And this just makes sure the oven's at the right temperature when we need it.

And as always, when we are using the oven, we should always use oven gloves when we're putting food into or taking food out of the oven.

And if you haven't got an oven, you could always use an air fryer to cook the potatoes too.

So let's have a quick check for understanding, shall we? So in addition to an oven, what other equipment could be used to roast the potatoes? A, B, or C? Yes, that's right.

It's B, isn't it? The air fryer.

That could be used to help roast the potatoes.

Well done.

So now we're going to make our patatas bravas.

I bet you can't wait.

Now, before you get started, I want you to do a couple of things.

The first one is to get ready to cook.

So I want to make sure you've tied up any long hair, remove jumpers, wash hands, and wear a clean apron too.

And also want to make sure you've got your ingredients and your equipment ready too.

And as you are preparing and cooking, I want you to be safe and hygienic.

I want you to do them precisely and accurately too.

Okay, so how did you get on? I bet your potatoes and spicy sauce are absolutely amazing.

Have you tried any yet? I bet some of you have.

Well, let's have a look at the recipe, shall we? To see how you were successful.

Well, the first thing you would've done was to preheat the oven so it's ready to cook, so it's the right temperature.

Then you would've diced the potatoes.

Do you remember, we didn't peel them, but we should have washed them first.

We then would've put the diced potatoes in the foil container and then we would've drizzled over a little bit of oil.

Then we would've put the foil container on a baking tray and put it in the oven to roast the potatoes for about 20 to 25 minutes until golden.

And about halfway through, we'd have taken them out and just moved them around a little bit so they're evenly cooked on all different sides.

Then we then would've peeled and diced the onion, peeled and chopped the garlic.

And then we would've fried the onion and garlic together in the remaining oil for about five minutes.

Then we would've stirred in the tomatoes, paprika, chilli, and oregano.

Then we would've brought the sauce to a boil and then reduced the heat to a simmer for about 10 minutes.

And then when the potatoes are cooked, we would've poured the sauce over the top.
