      Lesson details

      Learning outcome

I can use food skills to make Mexican pockets.

      Key learning points

      1. Recipes can be inspired by cuisines around the world. These pockets are inspired by the dish Tetelas, from Mexico.
      2. Recipes can be modified to meet the needs and preferences of different people.
      3. Spices and herbs can be added to a dish for added flavour and aroma, and enhanced taste and appearance.
      4. The food skills used to make pockets are measuring, grating, slicing, dicing, portioning, folding and using the oven.

      Keywords

      • Mexico - a country in southern North America

      • Mexican - relating to Mexico

      • Modify - to make changes to something

      • Dicing - to cut food into small cubes

      • Portioning - to divide equally

      Common misconception

For extra flavour in a recipe, only salt and pepper can be used.

There are lots of ingredients that could be used, such as spices, herbs, and other aromatic ingredients e.g. lemon grass, harissa.

      Teacher tip

Encourage pupils to work in pairs, giving each other useful feedback on their food skills. For example, as one pupil slices or dices, the other pupil can give feedback on their technique.
